“Good things come to those who wait,” as the Old English phrase by Violet Fane is commonly said. And this is certainly the case as the long anticipated arrival and opening of Liberty Commons is officially open to everyone as of January 31st, 2017.
An Incredible Partnership
Who are the businesses inside this new and beautiful space for all of us to enjoy? A unique partnership between Ontario founded restaurant group Oliver & Bonacini and Alberta based Big Rock Brewery has been formed. Oliver & Bonacini operate many successful Ontario restaurants and partnerships including two with Toronto Saks Fifth Avenue department stores.
Both partners bring their own excellent expertise to Liberty Commons to make it Liberty Village’s newest brew pub.
Food to Love
A culinary experience to be enjoyed time and time again is created and delivered by Oliver & Bonacini chefs Anthony Walsh and John Horne. The perfectly tender chicken wings will melt in the mouth with a buttery chicken flavour. Love sausage? No problem! Enjoy farm to table freshness with scrumptious sausage sourced by fellow Liberty Village business, Bespoke Butchers. Prefer something a little lighter and very healthy. The salad options are always a great choice and delicious. If a more traditional pub fare is desired, the fish and chips are an excellent choice as the seasoned chips complement the lightly battered haddock. Anything that is ordered will be sure to not disappoint.
Beer to Love
Big Rock Brewery has arrived at Liberty Commons. Craft beer is brewed on site under the excellent expertise of brewmasters Connor Patrick and Dan Ellis. Four different brews are initially filling up the 6 beautiful fermenters that are located in the basement of Liberty Commons. These brews include a White Raspberry Berliner Weisse, Nitro Stout aged on Cocoa Nibs, a Blood Orange Belgian Pale Ale and a Black Plum Baltic Porter. Any of these would compliment a delicious meal at the restaurant. Tall cans, Variety Packs and branded merchandise are all available to be purchased to enjoy at home from the Tasting Room.
A Place to Love
Many guests will be in awe with the design, amenities and comfort of the space. Liberty Commons has two main areas which are The Big Rock Tasting Room located on the main floor and the Oliver and Bonacini restaurant at the bottom of the stairs. Special attention was made to maintain the original aesthetics of the brick and beam structure that was once the St. David’s Wine Growers Co. building. The restaurant furniture was very thoughtfully curated to incorporate trendy lighting, designer chairs, mosaic tiles at the bar and front entrance and some marble table tops.
The Tasting Room is a great meeting spot to wait for friends or coworkers as it has high ceilings, friendly and knowledge staff and a warm inviting atmosphere. Host a business meeting at Liberty Commons. An extremely functional and high tech private room is available and a semi-private area can also be reserved. Once the patio weather arrives, guests will enjoy their drinks and meals outside.
