It seems like every week there is an exciting announcement of a new shop or restaurant coming to Liberty Village. This week is no different with Something In The Water Brewing Company publicizing their official bricks-and-mortar facility at 151 East Liberty St set to open in Spring 2022. Founded by Steve Waugh, Something In The Water Brewing Company launched as a contract brewing company in 2019 with their speciality being “curiously sour beers with just a hint of sweetness.”

Syndicate Brewing facility in Niagara Falls was their initial production centre with their new venture into downtown Toronto featuring a 10-hectolitre brewhouse. They will produce their flagship Lee River Blackberry Vanilla Sour and newer beverages: Rocky Point Mexican Lime Lager & Pancake Bay Sweet Brunch Stout. The space will feature a taproom, café, cobblestone patio & retail shop. Steve Waugh shares,

“Our space will be completely different from the other amazing breweries in Toronto that have a more rustic and industrial feel. Our room will look more like an upscale cafe, and our food offerings will be artisanal and curated. All our beers will be brewed on site, small-batch and curious in style.”

Their flagship Lee River Blackberry Vanilla Sour is brewed using real blackberries & Madagascar Bourbon vanilla pods. It was rated 88/100 by the iconic Globe & Mail.

It is thoroughly described as follows:

“The smack of blackberry tartness meets the creamy sweetness of vanilla in Lee River Blackberry Vanilla sour. A curiously balanced and refreshing beer. Despite being a sour, the low IBUs means it’s not offensive like the IPA you can still taste from last night. The sweet sourness of this beer makes it drink more like a rosé than an ale. It’s perfect for those that are new-to-sours. Or even, new-to-beer.”

Notable mention to their Pancake Bay Sweet Brunch Stout which recently won silver at the World Beer Awards. The beverage was curated by Brewer & Partner, Rick Tanton, who cleverly combined oats, coffee & maple syrup to create a curious & delectable sweet stout!

For every can purchased, Something In The Water donates 5 cents to Swim Drink Fish which safeguards swimmable, drinkable and fishable water across Canada. They also sponsor 10 beaches across Canada, and their beers are named after some of their favourite bodies of water.
